Spice Rubs, Sauces, Jams, Concotions
                                                      Spice Rub Recipes:

* Spice rub mixes INCLUDE salt & pepper, so don't add more salt to your diet by
adding salt and pepper to your dish on top of the spice mixtures..substitue salt for
salt alternative (like "no salt") or omit it all together if you have high blood
pressure. That is the reason I began making home made spice blends in the first
place, to cook for someone with high blood pressure keeping the salt LOW.

*It's helpful to have a coffee bean grinder that you use ONLY for spice grinding
when making your own spice mix rubs! DON'T use your grinder for toasted spices
and then grind your coffee beans up! 80O Unless, you prefer a 'spiced' cup o'joe..

Slightly Spicy Pork & Chicken Rub
2 TBS Ground Coriander
2 TBS Ground black pepper
1 TBS Salt
2 TBS Hot Pepper Flakes
2 TBS Chili Powder
1 TBS Ground cinnamon
2 TBS Fennel seed
2 TBS Cumin seed
1 TBS Black peppercorn

In a dry pan, toast the fennel seed and the cumin seeds. Let cool. Add toasted spices
to a grinder and grind until fine powder. Add all ingredients into a container with lid,
shake to combine and then transfer your spice rub to the storage jar you plan on
keeping it in.

The Florida Keys Rub:
1 TBS Ground black pepper
1/2 TBS Chipotle powder
1 TBS Salt
1 TBS Ground cumin
3 Dried bay leaves
1 TBS Garlic powder
1 TBS Onion powder
2 TBS "The Spice Hunter: Key Lime Pepper Blend" (which includes: garlic, ginger, lime,
thyme, onion, cinnamon, allspice, cloves, nutmeg, and habanero chile)
1 TBS "The Spice Hunter: Jerk Seasoning" (which includes: ginger, mustard seed, onion,
allspice, garlic, hot paprika, thyme, fennel seed, cloves)

Grind up bay leaves in grinder and combine all ingredients in a container with lid,
shake well and transfer to a jar that you will keep it in.

Pork Spice Rub:
1 TBS Ground black pepper
1 TBS Salt
1 TBS Light brown sugar
1 TBS Ground cumin
1 TBS Mustard powder
1 TBS Onion powder
1 TBS Garlic powder
1 TBS All purpose grill seasoning for steaks or pork chops (which includes: lemon, chile
pepper, all spice, coriander, majoram, oregano)
1/2 TBS Chipotle powder
3 Dried bay leaves

Grind up bay leaves in grinder and combine all ingredients in a container with lid,
shake well and transfer to a jar that you will keep it in.

"Marini's Blend" (All Purpose Italian Blend):
1 TBS Salt
1 TBS Ground black pepper
1 TBS Crushed red pepper flake
1 TBS Dried oregano
1 TBS Dried thyme
1 TBS Dried parsley
2 TBS Granulated Garlic

Combine all ingredients in a container with lid, shake and transfer to a jar that you will
keep it in.

All Purpose Chicken Spice Rub:
1 TBS Salt
1 TBS Ground black pepper
1 TBS "Bell's" Poultry Seasoning
1 TBS Dried rosemary
1 TBS Dried thyme
1/2 TBS of "Salt Free: It's a Dilly" spice mix (which includes: dill, lemon, garlic)
1 TBS Garlic powder
1/2 TBS Onion powder

Grind rosemary in the grinder and combine all ingredients in a container with lid, shake
and transfer to a jar that you will keep it in.

"South of the Border" (All Purpose Spanish/Mexican Seasoning):
1 TBS Salt
1 TBS Ground black pepper
1 TBS Dried cilantro
1/2 tsp Cayenne pepper
1 TBS Ground cumin
1 TBS "The Spice Hunter: The Zip" seasoning (which includes: paprika, chile pepper,
jalepeno, coriander, oregano, lemon)
2 TBS Chili powder
1/2 TBS Onion powder

Combine all ingredients in a container with lid, shake and transfer to a jar that you will
keep it in.
